Quickly dressed greens to pair with breakfast, lunch and dinner


I like to throw some sweet baby lettuce in with every meal I can, and when you add in a bit of fresh dill or parsley, some citrus, olive oil and flaky salt, it’s a very welcome addition to each dish. For breakfast, I’ll have them with eggs, smashed potatoes and bacon; for lunch I’ll add some goat cheese and berries, for dinner I’ll serve this on the side with just about anything: it really brightens up every meal. You’re welcome to double or triple the salad dressing recipe and save it in a jar to use throughout the week.


Ingredients:

  • 2 big handfuls of sweet baby lettuces

  • 4 Tbsp. olive oil

  • 1 Tbsp. fresh lemon, lime or orange juice

  • A splash of champagne or white wine vinegar

  • Lots of freshly ground black pepper

  • Flaky salt

  • 1 Tbsp. fresh dill, chopped

  • A sprinkle of grated pecorino romano

  • Drizzle of chili oil or another really flavorful oil (like Brightland, Wonder Valley or something from your local grocer) if you’ve got one on hand


Directions:

  1. Add your olive oil, citrus, champagne vinegar, ground black pepper and flaky salt to a small bowl and whisk together.

  2. Divide each handful of baby lettuces and dill to two serving bowls.

  3. Drizzle dressing over and toss to coat. (Pour slowly and don’t use all of the dressing if you lean toward a less-dressed salad and save the rest for later). Top with freshly grated pecorino romano, more flaky salt and pepper, more dill and a drizzle of chili or another specialty oil. Enjoy!
