An ideal salad for Autumn: super thin and tart apple slices covered in a cinnamon-honey dressing with some very simple, spicy, crispy-yet-still-easily-chewable croutons, and lots of nutty cheese.

Serves 2-4, takes 10 minutes

Ingredients:

FOR THE DRESSING

• 1/4 cup extra virgin olive oil

• 1 teaspoon cinnamon

• 3 tablespoons red wine vinegar

• 1 teaspoon lemon zest

• 1-2 teaspoons honey

• A few pinches of flaky salt
