Here we have everything I love about an Italian chopped salad—paired with my favorite dramatically-large pasta noodles and go-to tarragon mustard salad dressing. I’ll assume it’s safe to say that we’ve all had dozens of summers worth of those pasta salads (looking at you, spiral noodles and black olives) and, personally, I’m all good on those. Quickly cooking the tomatoes, artichokes, and capers offers a bit more depth flavor-wise without the need for a half dozen other ingredients you might find in a traditional Italian pasta salad. This is fairly low-lift and all of the ingredients can be prepped while your pasta cooks: make this a few hours in advance of a picnic or backyard dinner and you’ll be good all set!
Serves 6+ for a picnic alongside other dishes.
